Beef with Broccoli

Beef with Broccoli/ z( o# M0 M2 h: T
Serves 3 to 4

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces$ |( c/ }' J  Y, Y! K5 ^

Marinade for Beef: , o: C( d. z1 {& J& F, ^
1 egg ; D* f) E  u' J  {+ L; m$ W
1/3 tsp (1.5 mL) salt5 U" Q& h: q% ^& I  C- N
1 Tbsp (15 mL) cooking wine5 k/ G! K! S/ T5 e% C, a
1 Tbsp (15 mL) cornstarch) h8 p* |3 S0 m
2 Tbsp water- z; @+ E* C% _7 q9 f: g

8 x1 p  v2 @, r9 ^, h) c1 1/2 Tbsp (20 mL) oil5 k. T/ Q; S. Z- R. g  C8 C) I

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
' b1 f$ K$ {# M1 cup (250 mL) cooking oil. q5 z  ^) p' \* q9 |
2 1/2 Tbsp (30 mL) oyster sauce& U' _0 L1 A4 x* `4 F
2 Tbsp (25 mL) light soy sauce
; t5 w" R+ f7 k* c0 m3/4 Tbsp (10 mL) dark soy sauce
9 f! h- a, u9 m7 Q# \1 Tbsp (15 mL) sugar
( d& M4 \9 P6 E0 H! Ha few drops of sesame oil
4 {8 \# U3 ~# L, h8 _2 q9 h* \2 cloves garlic, crushed8 ]# \) \. j9 A1 k0 M3 Z# R
1/2 cup (125 mL) chicken broth0 G5 }0 f! g2 i4 n* R
2 Tbsp cornstarch (if desired)

# A. e+ Y: d3 B$ `9 N4 _: s; [Directions:
4 f! Y0 S: f- y+ l/ CSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ! K( V+ c7 S, K- _  y/ q$ x  p! k
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
- `8 h) `' R8 h+ Z4 K  _Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
1 C: g) ]" O# ^  N4 {1 rHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
