Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
& O# m6 ]8 K6 y6 G5 m. w& ]
! W( C$ M( w9 N1 U( Y- QMarinade for Beef:
8 q5 ~/ B/ p" ^- j1 egg # _3 W, h' h- q& ?6 P. l9 F
1/3 tsp (1.5 mL) salt2 p$ i5 _  W  i
1 Tbsp (15 mL) cooking wine
/ k7 w1 S/ P+ N& p8 [8 p1 Tbsp (15 mL) cornstarch
' ?. h" n7 W& v2 Tbsp water2 `& V% s* D" o
6 j) g  D7 |6 @7 f- Y
1 1/2 Tbsp (20 mL) oil
! C9 g/ }/ ^# s% g" Q6 L6 ]2 G. q
0 @  Q2 K1 S" T6 e( B& N' l1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
/ o* P6 S* c/ }3 I0 Z) V: x0 b1 cup (250 mL) cooking oil
0 _+ V# N8 d8 `2 \2 1/2 Tbsp (30 mL) oyster sauce8 p6 }2 O+ m# B: f8 W
2 Tbsp (25 mL) light soy sauce/ Q1 l- f6 u* |: M( k8 f: [) W; c
3/4 Tbsp (10 mL) dark soy sauce" [: i+ W7 p6 i
1 Tbsp (15 mL) sugar
2 ^1 }9 }) k: l8 c4 A& sa few drops of sesame oil
5 m& p9 g& j# F5 }& z/ \3 `- f2 cloves garlic, crushed
7 j9 ]# O9 K2 j1/2 cup (125 mL) chicken broth0 P1 W5 X1 B# o$ \! C
2 Tbsp cornstarch (if desired)
0 E+ M& e6 g- }- c( |5 r+ W" @+ K- q3 K& j
Directions:
- Z- q, ]$ [9 D6 h8 [Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
- K: D: k1 |, K5 [Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
! a5 M' n! ?+ y+ B' qAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
' J0 B5 S4 _2 {9 d0 IHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
8 g- A7 y/ b& _; Y+ y# U* {$ W* d7 q# J*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
