Beef with Broccoli

Beef with Broccoli( b0 X: k6 P  {2 J  I

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

: E, R4 B3 l6 x- V1 C& c1/3 tsp (1.5 mL) salt
( n- D& c% O0 q+ p1 Tbsp (15 mL) cooking wine% E) D+ p6 t7 F( T4 s6 f, k6 D
1 Tbsp (15 mL) cornstarch
- W9 X) R9 E; [- `0 ]# S0 E2 Tbsp water  w7 {5 v; i7 V, t

. q1 X+ Z: @0 w, s5 Q9 ?% J( P4 ]1 1/2 Tbsp (20 mL) oil1 [9 V( [, b+ }0 J

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
; E" v" b5 Y: C1 cup (250 mL) cooking oil- o$ {2 n: h  b1 _, B7 a
2 1/2 Tbsp (30 mL) oyster sauce1 M- T, x# b# l) }& ~! `
2 Tbsp (25 mL) light soy sauce
8 m! T: T* u/ u, K3/4 Tbsp (10 mL) dark soy sauce
( c6 h& f9 h1 D, h* ^1 Tbsp (15 mL) sugar& ]* P0 X! h/ t$ G
a few drops of sesame oil9 ~8 `8 B4 y/ H. @* G* J" S  u
2 cloves garlic, crushed
$ q0 T+ Z4 c7 b9 \! V* [' Y: ?1/2 cup (125 mL) chicken broth
* m' B2 g. q( I1 e9 J& I2 Tbsp cornstarch (if desired)9 k+ |" _- N6 D; U
/ e  |" _; _' P
Directions:
3 T1 Q6 L4 i7 V9 i' YSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
! G" A3 |+ {/ W' ZHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.0 ~2 V8 H; l) S; r* p, L: b8 Z
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  1 u9 N, ~6 Q; E) k  ~5 x" J
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.$ I$ N% i) |, k! Z8 ^& z# A

5 |0 ^3 t, y8 r& l4 _" J*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
