存一个菜谱,调整了好几次,现在做得比较成功,做酸种面包的妹妹们可以采纳。我用的是7 quart 的铸铁锅

water: 3,1/2 cup

wholewheat starter: 1/3cup, B# o& K8 b! G2 z! D: h
sugar or molasses or honey:4 Tablespoons* u% e/ }5 Z3 p* B+ z
salt:3,1/2 teaspoons+ T( G( d/ Q" [3 F3 ?8 h
Dark rye flour: 3 cups. U7 {5 B' f4 y1 Q) Z( @1 \" `& v
Wholewheat flour: 4 cups9 ?) {, P/ G! \. p; `/ |4 v1 F
% l8 S6 S# F( A6 ^optional: (我没有加)% O' a2 g3 h+ r/ ^
Fennel Seed 2 Tablespoons
, i0 V" Y( H0 I. NAnise Seed 2 teaspoons
, |8 k' L+ Z" W3 I ]careway seed 2 teaspoons4 ` y4 Y y) t6 w" @1 a
zest of 1 orange

搅拌揉好,用保鲜膜覆盖,室温下18小时-24小时
; E7 I& s7 _. t) @ }/ j1 s取出来折叠成型。放在和烤盆同样大的盆里,覆盖,继续二次发酵2小时。注意:发酵盆里要放cheese cloth 上后撒大量的面粉(因为rye的面团非常粘)

+ C I8 @' o% O% Epreheat the ovan and the pot 500 华氏2 f( W7 M N1 o, e* Z7 x$ D' ^
reduce to 380 华氏,and bake with lid on for 60 min
4 w5 ?0 N* o3 Z. Vopen lid and bake for 10-15min
8 e c' U' p2 V0 w0 P3 _; ~! Q! QBroil for 3 min until the crust turn brown
