( d' C& t, E; f * 2 cups sliced chanterelle mushrooms; ~8 C# ^5 P5 v4 R$ t
* 1/3 cup diced roasted red pepper

! e0 L- ]& d# L; R, J; M! u% BSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

$ y1 T4 C: \. e Nand 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low.

; b* S% c4 _6 N/ kSeason the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

0 G- q+ f3 `- B& d/ JTransfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.4 z4 V/ s; w; w6 O; X' ~- y9 g
Place the grilled halibut steak on the top, add some lemon cubes beside it, some micro greens on the halibut steak. Enjoy! |
