2 1/2 cups sifted all-purpose flour

1 tablespoon distilled white vinegar ( X; m: G0 n# o9 h

In a large bowl, mix flour and salt. Cut shortening into the flour until it is the size of peas.
( r, H* b0 l% C1 y8 o: B8 uIn a 2 cup measuring cup, beat the egg lightly. Add vinegar, then fill to 1 1/2 cups with cold water.
0 |; [9 \) x! l+ M4 ?7 [% EAdd just enough liquid to flour mixture to hold the dough together. It should be approximately 4 tablespoons. Reserve remaining liquid for your next batch of dough. * W. l% g) a: e- n$ k

Preheat oven to 425 degrees F (220 degrees C).
' z7 U7 I! W& F @, iIn a large saucepan, simmer berries in 1/4 cup water for 10 minutes. Stir in lemon juice with berries. Combine sugar and flour together in a medium bowl, then stir into berry mixture. Pour mixture into a pastry lined 9 inch pie pan. Dot with butter. Place second crust on top of pie; seal and flute edges.
& i- U9 w' q9 V( Z7 Q' sBake in preheated oven for 15 minutes. Then reduce oven temperature to 350 degrees F (175 degrees C) and bake for an additional 35 to 45 minutes, or until golden brown. |
