烤蛋糕

• 1/2 cup butter
, y' V; D5 l6 i( q( s" W6 r+ i• 1 cup sugar
; L4 N7 j& U. V* n* q1 k& a• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none); s8 p. g: ^4 V% F* \# D/ d% G
• 1 1/2 cups sifted flour or all purpose flour (former is better)

• 4 eggs, well beaten' \2 \- {' l' H% k0 m4 j- Q; g& ?

6 s5 ^7 D: _7 ABeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
" G- p1 p7 s$ K( Y7 e- m) NTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. ; A- S% O6 r! Z8 [5 ^" f! Z
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。% k( S- F _/ X- S
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
