Beef with Broccoli

Serves 3 to 45 k/ \& ~" ^* P: F2 t

% S" Q; Y1 h( R& U3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
$ F) m% Z, p# W% l  \  b. b! M" m/ L$ T! P$ e# A
Marinade for Beef: ; f% x, F& i1 k" t2 `( M5 q/ `. |
1 egg
' c3 j6 ]! o( ~7 d* c9 P1/3 tsp (1.5 mL) salt% j# s5 l1 ^2 j# t. J& O& F: r4 M) W( S
1 Tbsp (15 mL) cooking wine
( W  _5 l' F$ |' m4 ?3 h2 K' S1 Tbsp (15 mL) cornstarch
9 S! Q( I0 b" X; Q! u; Q9 t2 Tbsp water

0 P  ~, h6 Z) D7 ]1 1/2 Tbsp (20 mL) oil/ y- A# E* N* S! R5 p; O

2 {: H) U$ Z. S8 T( s1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
! l# v3 W$ K; c" @1 cup (250 mL) cooking oil
8 H2 y$ p1 o" |2 1/2 Tbsp (30 mL) oyster sauce8 r$ ?+ n8 |/ }) G
2 Tbsp (25 mL) light soy sauce0 ^+ _3 {1 S" h% F' ^" C7 {
3/4 Tbsp (10 mL) dark soy sauce& \; {' o- A1 ^) r/ R
1 Tbsp (15 mL) sugar+ J  }$ a3 H8 l/ e2 X& R( c
a few drops of sesame oil
0 Q$ t' \& X" o  V0 h2 cloves garlic, crushed
5 [# \! K/ h7 t: G1/2 cup (125 mL) chicken broth
( O0 J6 w, X, S7 j* U2 Tbsp cornstarch (if desired)
0 F9 r+ _: B" X! ?5 \+ S1 |8 W
" M  n' r3 y  u% y" U: N* a& ODirections:
( m/ W+ y' T+ ^- G( m1 TSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
9 l; z! |% r6 e1 `; ?Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
& n+ Q3 ]9 T$ B2 z& m. wAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ' [# v. f, M/ q5 o
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
