Beef with Broccoli

6 u; K; k- D0 K3 c3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces5 m$ Q* u4 ?% k" w4 z

1 egg ' W# ~, I5 T6 h4 K 
1/3 tsp (1.5 mL) salt 
: a3 a$ |. O/ D0 U2 c+ B1 Tbsp (15 mL) cooking wine 
+ a, j* o- ^9 P1 Tbsp (15 mL) cornstarch 
+ |, s3 G4 L# [3 L8 |2 Tbsp water

% H1 X6 Y1 n# ~1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices5 q. x( ]  T3 f# a- H 
1 cup (250 mL) cooking oil 
! a' p7 `% `8 N6 P# ~2 1/2 Tbsp (30 mL) oyster sauce% Y3 Z# q1 O$ s1 T& z 
2 Tbsp (25 mL) light soy sauce 
7 R# q1 c, V7 L: A# l+ r6 |3/4 Tbsp (10 mL) dark soy sauce 
9 @/ P" M3 x$ ^+ f2 J5 s1 Tbsp (15 mL) sugar 
* `/ K# L) Q. E  r# S3 {a few drops of sesame oil 
' [" R( x4 i3 U! i- w4 h1 F2 cloves garlic, crushed 
8 N) A3 I' @+ ^3 ^% M+ D0 o& }1/2 cup (125 mL) chicken broth 
* n, J. b( M" x/ M2 Tbsp cornstarch (if desired)

Directions: 
0 m4 L' \! K$ R# Z2 CSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.  
+ z1 G! \. V* L  d  W* ]Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel. 
! o. W8 y5 S. uAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  1 f! n; ]" f& j+ l. _7 \8 }5 `2 G 
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.6 f9 B; q1 l' x, i! c
