• 1 1/2 cups sifted flour ( if you don’t like the trouble, use all-purpose flour)

2 X9 `9 b7 R$ M9 L• 4 eggs, well beaten

Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. * ~9 k9 y* x4 r; ^
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.9 R1 E# @1 t: ]" Y& ]3 Q' R7 t4 w

For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
