烤蛋糕
INGREDIENTS:

• 1 cup sugar
/ [9 f* `3 f2 W M, H# S+ U• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)& f( ?( d2 Z; K. q7 v' X
• 1 1/2 cups sifted flour or all purpose flour (former is better)
& T$ _: P( r; I& d3 @/ T8 s• 1 1/2 teaspoons baking powder / R: ? |1 H! S, L4 O
• 4 eggs, well beaten

* u9 v. x3 s6 r* ]% x+ dPREPARATION:
7 h B' \0 `7 l: ~Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
& R9 c" }0 a, |; e3 e, uTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
9 f! f+ d; D0 T# k6 g0 t: uBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

" D6 m6 Z) P* ?2 b8 O }这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。
( L$ B- x0 Q1 Z/ Lbeating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
