烤蛋糕
INGREDIENTS:

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)1 W2 s6 F4 K9 G) D9 O- S" H3 s7 w
• 1 1/2 cups sifted flour or all purpose flour (former is better)( C5 [! I5 Y8 D+ G* e M& }
• 1 1/2 teaspoons baking powder

" r7 Q: M; c- v. H) J; D) a. l9 jBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. ; F( n A5 G; p- J
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. ( h, u: S9 D3 r2 p* r5 d
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。7 v* f+ K" Z8 G# ]6 ~$ M1 _# X
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。' ^: X3 S. h2 k( B3 s+ ]

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
