Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces$ g' m# U3 b) l5 U0 \; C( U0 R1 j

+ Q8 X( T6 e8 b5 RMarinade for Beef: 5 z# P9 ?1 |% ^' w. K  n* q
1 egg
& j  [3 l+ ~3 ^1 u; Z1/3 tsp (1.5 mL) salt$ t  }: q' {, c" l% m; j
1 Tbsp (15 mL) cooking wine4 F5 M7 Z: q6 m  Q
1 Tbsp (15 mL) cornstarch
+ H: {9 h7 M2 h5 o2 Tbsp water2 }/ h8 A3 |' J0 _0 R
2 X( S/ E: Y4 T0 X+ B
1 1/2 Tbsp (20 mL) oil5 u- C! c% c, G/ L! Y

* L4 Q6 v7 ^; \  O1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
% Q; X# ?6 o( z% X! o1 cup (250 mL) cooking oil
% W7 I8 y* z. S* w$ `3 c2 1/2 Tbsp (30 mL) oyster sauce: Q, A. L' P  M: {, A
2 Tbsp (25 mL) light soy sauce
* i& h3 V3 M9 \7 ~' u  ], e+ V. K3/4 Tbsp (10 mL) dark soy sauce
" {4 d2 d  b( `, I- L0 W( g1 Tbsp (15 mL) sugar* A/ f% D9 s( Z  ]
a few drops of sesame oil
. i' }. a+ {) s1 S$ j2 cloves garlic, crushed
! ^9 ?3 [# }' v- j& C1/2 cup (125 mL) chicken broth5 _% d/ i' A  F0 v
2 Tbsp cornstarch (if desired)/ f8 F( r* o( C2 K9 y3 X  a6 q0 l

7 }& W& j1 a& xDirections:- A7 ]- L- l' |9 n7 ~& h
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 7 z5 e, l) A8 u' |
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.. T" w: D+ d" n8 e
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
# I3 V$ D9 E- }: }% K7 T% q4 m. r+ VHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.$ C& N! g* j: \: z8 i$ n

: @1 A! j; Y  z7 P4 r% D/ L*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
