Ingredients

# }6 C# |9 X/ w" {% v8 v- _ * 2 tbsp olive oil
6 t! C( z7 `: l" ]% @ * 1 tbsp butter
7 D9 D+ t* n( i * 2 cups sliced chanterelle mushrooms, W* Q6 I3 B3 Y8 o- L: ^- {
* 1/3 cup diced roasted red pepper: u6 @0 _ Z Y& D! N$ @% B; _5 D/ n
* 1 cup fresh corn kernels( k& S- }2 f/ w5 x8 e* c
* 1/2 cup water6 i1 w* ? O+ B. t. L; V" A0 k1 ?3 G
* 1 lemon, juiced! Y% `+ ?' R2 z) d2 h% w

* 1 tbsp minced fresh tarragon

Instructions

) ?' `+ I* j& o" K5 n9 GSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Add 1 cup fresh corn kernels,
. F; [. {6 `+ r6 ?1 l8 Uand 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low.

, P" E% ^0 H8 E( y: r7 LSeason the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

7 O( u$ e& ]. S! m/ ETransfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
