* 2 big halibut steaks3 ~4 W) H' b( b3 b) G
* 2 tbsp olive oil
* W( n& V4 C' D5 Y( {* f. p7 \ * 1 tbsp butter8 N7 V( k7 U4 [* P! i3 G
* 2 cups sliced chanterelle mushrooms+ z3 E7 N" P, f$ I! \- S
* 1/3 cup diced roasted red pepper% d# J% r: O" A
* 1 cup fresh corn kernels

* 1 lemon, juiced

* 1 tbsp minced fresh tarragon

Step 1 7 @" S& \0 u v0 ?
Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Step 2
$ {! a4 P5 o( `Add 1 cup fresh corn kernels,
6 A4 G$ D" r; y5 ~and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. 6 U8 p/ O- K* j* k/ _$ u
Step 3 * c# x: s) c1 M, k1 j w
Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.4 @, w: u% l3 A5 T( x6 f

& a' H: `2 {9 X/ KTransfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
