This grilled halibut steaks features the mild, meaty fish on an earthy, turfy, subtly sweet chanterelle mushroom and corn base.# R6 {+ w- O4 V

: ]3 V5 R& m \ * 2 big halibut steaks( V; y. h" \: y
* 2 tbsp olive oil
8 m$ Q3 L# \- w7 n * 1 tbsp butter
8 \! T4 K4 p7 q2 f( W8 g; P * 2 cups sliced chanterelle mushrooms
% {% C. T: u2 Q( l/ G& E7 m * 1/3 cup diced roasted red pepper
3 [+ L+ B; K$ i" P/ G * 1 cup fresh corn kernels

Step 1 1 {4 w3 j* {; N7 |
Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned. 1 z" J( P0 Y# {& O
* F: e6 m* G' [2 r* U1 D# L* t1 TStep 2 / O. s* d1 `$ ]& ^
Add 1 cup fresh corn kernels,
# {& S0 E0 J O8 {, U3 qand 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. + Z: Z: _7 @( W

& \6 p/ ?$ C. ?9 L" O* c6 JSeason the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.4 u# ]9 C- R& o, Q
Place the grilled halibut steak on the top, add some lemon cubes beside it, some micro greens on the halibut steak. Enjoy! |
