• 1 1/2 cups sifted flour ( if you don’t like the trouble, use all-purpose flour)
1 V+ `$ l$ p1 m- Q• 1 1/2 teaspoons baking powder ' ?5 i0 ~7 }& X2 A. p2 u
• 4 eggs, well beaten6 X) L" ^: ?& ?
PREPARATION:
, P% w& D" e g5 J2 ]7 Y/ D; p' qBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. & n; z9 p! Y% O4 X6 ^
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
& v6 ~( o& `0 O, Y) N: pBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.! P% p4 Y4 _, J; z- R& L" K# }
' q p# W+ i: \1 QFor beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
