烤蛋糕

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
4 L: M6 z) p/ b1 q• 1 1/2 cups sifted flour or all purpose flour (former is better)4 }, _, \: |0 ^ g5 k( n8 U
• 1 1/2 teaspoons baking powder + i' b7 [3 {# Q' x, t b
• 4 eggs, well beaten

Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. 6 \# {$ E# H2 f+ Y0 \7 ^% o# z
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
& c& [! \2 @" e6 M e6 d( JBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。
9 ]8 T3 S; ~9 wbeating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
