烤蛋糕
INGREDIENTS:

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
8 K: Q8 n( e- j; ]& W# l0 z, N4 v3 s• 1 1/2 cups sifted flour or all purpose flour (former is better)
5 p0 _& y( z/ Z% c• 1 1/2 teaspoons baking powder $ _- N: G! t! K! Y1 M J: x
• 4 eggs, well beaten

" x$ b6 e) |- g, WBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
: q" i" ]; c# |3 ^Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. 4 G9 J) s$ G, t) E. n2 v F
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

: l$ L5 ~& Y+ z3 U这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。! s: f8 B1 p) ]/ S9 t3 ~2 M; s( S5 B
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。6 {" M J9 g0 a% Q2 R" ^# r7 o; J
& v8 h: r5 C6 X5 h检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
