烤蛋糕
INGREDIENTS:

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
" l+ N; r$ [3 @: ?" k9 D$ {• 1 1/2 cups sifted flour or all purpose flour (former is better)3 D" h/ ^1 J; q/ \( T1 p+ N8 z
• 1 1/2 teaspoons baking powder
2 z4 Q: K2 \! f3 {7 w; n/ |& r• 4 eggs, well beaten
2 q$ u7 x+ ^ `8 F+ g: Q3 n/ v. Z2 I2 H# [% G
PREPARATION:; e/ D) K3 z5 Y/ P+ a5 R
Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. 0 X: r* x. a& ~
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. " U! b/ u3 u. L% w, v
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

" @% a7 ^) ~& F: w5 `3 x这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。
8 S, H0 {) w6 c- ebeating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
