烤蛋糕

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)8 S" Y: }9 b# G+ H( G
• 1 1/2 cups sifted flour or all purpose flour (former is better). g$ V7 W: [, H |. m
• 1 1/2 teaspoons baking powder

PREPARATION:
) {! ?7 r4 I, k5 ]; C4 WBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
u+ y+ B) u7 e+ i! o* H1 p2 g- \0 j7 iTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
' F$ b6 z& Z2 n$ S$ ZBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

; r+ K" k$ L0 ^- _这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。7 S+ I4 y* Z/ k- _2 b; v
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
