烤蛋糕

• 1/2 cup butter
9 d4 F7 X/ h8 l' w• 1 cup sugar
8 D8 s: Z% W: [8 e& a, j• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
7 R/ h; l; D. D: I) a• 1 1/2 cups sifted flour or all purpose flour (former is better)- h/ k( V) m- e. t! y+ i: r
• 1 1/2 teaspoons baking powder $ Y4 n/ |9 g& E# \* b9 E `- L
• 4 eggs, well beaten+ q/ R* g3 a6 ^5 c$ k* j( a3 o

' k* P$ n2 S9 [& x/ P# K7 `: PBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
- s% f( y5 c: I- A# x3 V- VTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. $ {. y8 X* S$ H( S8 A
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。* @) O, ]% d; Y9 ]1 ?5 a
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。" `, @9 @+ W5 r( |4 r+ B# ^ T

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
