Beef with Broccoli

; r0 c" U5 ~3 |1 u3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

) o; Z. p1 E/ k; F# O( _. H$ TMarinade for Beef: - ?! V) x8 C1 f
1 egg 7 S. O8 R# I+ {+ S% P# g3 E
1/3 tsp (1.5 mL) salt: C- ~6 a3 G6 C( p% A' l2 D
1 Tbsp (15 mL) cooking wine+ O" \' z- l1 P0 `" u
1 Tbsp (15 mL) cornstarch

1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices+ x, w) a/ S" k: _8 m
1 cup (250 mL) cooking oil
, s) Z+ n% i6 A$ d: a2 1/2 Tbsp (30 mL) oyster sauce
- p  T- e9 r+ k0 S& N" c6 `2 Tbsp (25 mL) light soy sauce
' Q  Y; ~" L/ r3/4 Tbsp (10 mL) dark soy sauce
/ J! @1 h$ k7 x, L6 X1 Tbsp (15 mL) sugar
9 O5 u8 S' O& G1 ma few drops of sesame oil* }; Z1 k/ \$ T9 ~4 t
2 cloves garlic, crushed4 u( m: ]  a, Q: u& b  H* e
1/2 cup (125 mL) chicken broth
, \/ o! j% `. M7 v0 Y$ Z! f8 I) Y  T2 Tbsp cornstarch (if desired)

! l* U" F; ~. [# a( c' ODirections:+ ~/ w; F" L' P/ w; q
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
  [8 v5 D# t$ r3 f7 n. t; i6 f/ RHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.7 M* l: s, |) @/ O: |* {  H- @
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
7 i' I" p5 m# V( S( b# `Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.' k' C4 H& Q5 K  g8 F2 {+ k# v

/ N  G; ~6 v' g7 h" U) [*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
