Beef with Broccoli

Ingredients:
4 B, G/ q6 `% @3 V- z; o3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef: 8 e' u( a: U+ [! M2 O+ t1 M$ ^4 N
1 egg
7 w; J" `' B% l: K/ N2 P) I: Y1/3 tsp (1.5 mL) salt; p8 }1 _# v* k8 D: Q! ?
1 Tbsp (15 mL) cooking wine
: p. G- y) Z, d9 i: W8 Q; i1 Tbsp (15 mL) cornstarch$ B" l+ `% H+ G( N4 m
2 Tbsp water: j) v" U( E0 z) n7 K

6 x3 ^# W' H* N6 ~0 T! E1 1/2 Tbsp (20 mL) oil% R+ k- K* P, j+ m( ?
7 C& H5 V: L6 z. U4 i! n9 @
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices; f  a6 ~( r& u% K7 S+ D
1 cup (250 mL) cooking oil
6 E, Q  T- I$ r( p, F- e2 1/2 Tbsp (30 mL) oyster sauce
% Z) a, X$ i* b- F) [3 u2 Tbsp (25 mL) light soy sauce8 Z; h& F$ C' i! e4 e6 v$ e5 ]6 \2 |6 O
3/4 Tbsp (10 mL) dark soy sauce
. e  W7 q( S/ U1 Tbsp (15 mL) sugar
! D& s; C) Q# X( ta few drops of sesame oil
7 W! i/ m- |' \% ^) E9 r2 cloves garlic, crushed
6 E9 X/ L' t( Y6 p1/2 cup (125 mL) chicken broth1 f9 _: n( s! z
2 Tbsp cornstarch (if desired)& r9 |1 I; c' e2 `# o
/ ]' l3 _1 _8 r8 g: n# S: R
Directions:
" J8 V' i4 E& E+ CSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
9 _  Q* b$ }0 O2 m9 C7 T+ N: yHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
' [' C5 n7 w0 h& [1 E7 _Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ) T, I% j/ f' h; R
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
, l9 x( u9 i2 u4 C" E9 o*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
