Ingredients

" c8 _1 T U, W' |0 x4 e * 2 big halibut steaks
2 [% H. t. {; T( ?/ m! T * 2 tbsp olive oil
3 p* ]0 B9 i2 Z* e! U/ q$ Z * 1 tbsp butter( T2 W5 O; O3 T" L2 ? Z
* 2 cups sliced chanterelle mushrooms
# q$ E, B9 V2 Q/ c% M/ d1 z * 1/3 cup diced roasted red pepper
, U; c" t) f: a * 1 cup fresh corn kernels

* 1 lemon, juiced, t2 V; D1 }4 z
* salt and fresh ground black pepper
8 z3 l* C3 ^2 V' y. w * 1 tbsp minced fresh tarragon

Step 1
8 y/ }: M) g. E7 b" ]$ sSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned. . v% G$ B3 p# {* X4 o
/ ^' o- t1 O! h3 s% vStep 2 ; L& v3 x, I3 X2 C; n9 G
Add 1 cup fresh corn kernels,
3 N* F0 \& ?; T& k K ?and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low.

Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon., ~- Y ? O: @# y/ @$ c% o, w
Place the grilled halibut steak on the top, add some lemon cubes beside it, some micro greens on the halibut steak. Enjoy! |
