• 1/2 teaspoon vanilla extract( if you like the flavor) K6 `1 ?. q% w3 `" x
• 1 1/2 cups sifted flour ( if you don’t like the trouble, use all-purpose flour)

W* G" w6 q$ s. g• 4 eggs, well beaten
; T; n8 V S0 W H; O7 ZPREPARATION:
$ t: [+ w u6 s( S' N/ gBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. ! g" U# F. D& L& x! w& m
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. & l1 X% d# r) G. \4 ~
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.$ {& e/ W* F& _* ^- m
6 P% ^: e( a9 I& a* R2 a( w+ K. wFor beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
