INGREDIENTS:

• 1/2 teaspoon vanilla extract( if you like the flavor)
5 W. S" W8 W6 y* r+ V• 1 1/2 cups sifted flour ( if you don’t like the trouble, use all-purpose flour)
4 a* e2 s! T4 k: d- _• 1 1/2 teaspoons baking powder / A' o, |4 E7 _/ @) w4 {. u
• 4 eggs, well beaten

Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
% c$ T/ @9 {8 U8 M# lTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. 9 t. [5 O, u3 k4 r0 }" `
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.* l3 p: D5 }/ J! Y5 o# x# U9 b& v

2 ^' E7 o$ J$ o4 ~I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.( D; o+ e7 M1 T8 f) o
- m' l. z& y6 fFor beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
