烤蛋糕
INGREDIENTS:

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
6 U7 q* O5 P9 j: c• 1 1/2 cups sifted flour or all purpose flour (former is better)

• 4 eggs, well beaten1 h: L. h% c) G/ ~0 i A

PREPARATION:. w. f6 Z: I5 j# x$ u$ p3 Y" L
Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
_7 ]7 u8 g* J( DTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
% i$ ?; I% O1 h, Q% r( SBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered., M- A0 U I; H! r) @, h

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。* j, U9 B0 C7 V' }
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
